Our favorite way to cook Brussels sprouts - fast, easy and delicious.
1 pound Brussels sprouts, washed trimmed and cut in half
4 slices of bacon, diced
1/4 cup dates, pitted and diced
2 teaspoons balsamic vinegar
salt and pepper to taste
1. Heat a saute pan to medium high heat and add the bacon, stirring occasionally, until well browned, remove from the pan and set aside
2. To the saute pan, add an additional 2 tablespoons of oil and put the Brussels sprouts cut side down and leave them undisturbed for about 3 minutes or until they are nicely browned
3. Add the dates and bacon and 1/2 cup of water, stir them, and simmer for an additional 3 minutes - with a wooden spoon, break up the dates so they dissolve into the water and make a sauce, adding a little more water if necessary
4. When the Brussels sprouts are tender, remove from the heat and add the balsamic vinegar and serve
