Cauliflower Soup with Sesame Oil

This soup has a very short list of ingredients and big on flavor. The perfect soup to whip up with you want something warm and filling yet very light on the calories.



1 12-ounce bag of frozen "riced" cauliflower

1 tablespoon Roasted Chicken "Better-Than-Bouillon"

1/2 teaspoon kosher salt - I use Diamond Crystal

Sesame oil for drizzling

Cilantro leaves

  • Place the cauliflower and bouillon in a saucepan and add just enough water to barely cover

  • Bring to a boil and simmer for about 5-7 minutes or until very tender

  • Remove from the heat and with an immersion blender, puree until very smooth, add salt - it should be well seasoned, add more to taste.

  • Divide among two large bowls

  • Drizzle with sesame oil

  • Garnish with cilantro leaves
