I think I have created my new favorite chocolate chip cookie. Crisp on the outside, chewy on the inside. A glass of milk is all you need. Dang.
Makes 21 3 1/2' cookies
1 3/4 cup Jovial Einkorn all-purpose flour
3/4 teaspoon baking soda
2 teaspoons kosher salt - such as Diamond Crystal
1 1/2 sticks unsalted butter, melted
1/2 cup white sugar
1/2 cup brown sugar
2 tablespoons Lyle's Golden Syrup
1 tablespoon vanilla extract
1 egg
6 ounces good quality dark chocolate chips such as Guittard extra dark
Mix the flour, baking soda and salt together in a bowl and set aside
In a stand mixer combine the melted butter, golden syrup, and the brown and white sugar
Beat for about 3 minutes
Add the egg and vanilla beat for about a minute
Add the dry ingredients and beat until just combined
Remove the bowl from the stand mixer and add the chocolate chips and stir them in
Refrigerate the dough for about an hour
Preheat the oven to 325 degrees
Line a cookie sheet with parchment and measure out the dough with a 1 1/2" cookie scoop and roll into a ball
Place the dough ball on the parchment - no more than 9 per cookie sheet as they spread
Bake for about 15 minutes or until they are lightly golden brown and flattened out
Let cool on the cookie sheet until they firm, then cool on a wire rack
