Lemon Posset




A simple combination of three ingredients for this perfect summer dessert, rich and creamy and just enough citrus to make it pop. Add a few summer berries on top - perfect.


16 ounces of heavy whipping cream

1/2 cup granulated sugar

juice and zest of 1 large lemon (or two small lemons)


  1. Slowly heat the heavy cream and the sugar in a saucepan to a gentle simmer for three minutes

  2. Remove from the heat and add the strained lemon juice and zest and stir

  3. Divide among four ramekins until set and chilled


The lemon juice thickens the cream as it chills
