These are irresistible little bites of chicken bursting with a savory rum flavor and with a shot of lime and hot sauce, it makes them a down right addictive appetizer.
1/4 cup good quality dark rum
1/4 cup fresh lime juice
1/4 cup soy sauce
1 tablespoon brown sugar
1 1/2 pounds boneless, skinless chicken thighs cut into bite size pieces
1/2 cup flour
1 teaspoon sweet paprika
1/2 teaspoon salt
2 cups vegetable oil for frying
Lime wedges and hot sauce for serving
Combine the chicken, rum, lime juice, soy and brown sugar and marinate for at least 1 hour
Combine the flour and sweet paprika in a shallow dish
Drain the marinade from the chicken and toss the chicken in the flour mixture to coat, a few at a time and transfer to a plate
Heat the vegetable oil in a dutch oven to medium high heat
With a large slotted spoon lower the chicken pieces into the oil, do not crowd them
Fry until golden brown and chicken is cooked through, turning as needed, about 5-7 minutes
Remove from the oil and transfer to a paper towel lined platter and continue until all of the chicken is fried
serve with lime slices and hot sauce
