I am a little obsessed with this granola. It is so easy to make and so delicious!
2 cups old fashioned rolled oats
1/2 cup well stirred tahini
1/3 cup maple syrup
1/2 cup shredded coconut (sweetened or unsweetened)
1 teaspoon kosher salt
1/2 cup chopped shelled pistachios
1 teaspoon vanilla
Preheat the oven to 350 degrees
Combine all of the ingredients in a large bowl and stir until the tahini is well incorporated
Line a baking sheet with parchment paper
Spread the granola in an even layer
Bake for 10 minutes
Remove from the oven and stir the granola
Return the pan to the oven for an additional 10 minutes or until the granola is lightly browned
Keep an eye on it, so it doesn't burn towards the end
The granola will crisp up as it cools
Store in an airtight container at room temperature
I love to add this granola to my bowl of steel cut oatmeal and berries
and a bit of maple syrup is alway nice
