We just got back from a relaxing vacation on the Outer Banks of North Carolina. Our friends own a beautiful oceanfront home in the town of Duck. It has become our tradition to create a special cocktail to celebrate our friendship and remember the vacation long after our summer days together have come to an end, until next year..
4 large peaches, peeled and cut into chunks
1 cup water
1 cup sugar
a small bunch of mint
1/2 cup blackberries
Dark rum
Club soda
Combine the peaches, water and sugar in a sauce pan and bring to a boil, reduce to a simmer and continue until the peaches are tender, about 6-8 minutes
When the peaches have cooled slightly, put in a blender and puree until smooth (this will give you enough puree to make about 8 drinks)
In each glass put a few mint leaves and 2-3 blackberries in the bottom of the glass and crush with a wooden spoon
Add about 1/4 cup of peach puree
Fill the glass with ice
Add the dark rum – 1 1/2 ounces is a shot
Top the glass with soda water, garnish with mint stir and enjoy
