Tomato and Pearl Onion Sauce

Enough sauce for 4 servings


This simple rich sauce tastes far more complex than its simple ingredient list. It can be used to top pasta, or toasted french bread, mix in sauted shrimp, top a piece of roasted fish, or top asparagus or green beans. It goes well with goat cheese, feta, parmesan, mozzarella - In other words one of the most sauces out there.



2 cans diced tomatoes, including the juice

6 ounces frozen pearl onions

1 stick unsalted butter


1. In a saute pan, add all the ingredients and bring to a medium simmer


2. Reduce to low and gently simmer for about 30 minutes, stirring occasionally or until the pearl onions are quite soft and most of the liquid has reduced


3. Season with salt and pepper and serve
